Roca del Crit is a red wine produced by Gallina de Piel Wines, D.O. Emporda.
Gallina de Piel Wines is the personal project of David Seijas, sommelier at the El Bulli restaurant for 13 years. With this project, David Seijas aims to bring wine closer to people from the sommelier’s point of view, enhancing different styles and profiles, and seeking the character and personality of the place where they come from.
David makes his wines together with the best producers, selecting the best vineyards and local grapes. He currently produces two wines, one in Emporda and the other in Valdeorras, two very special areas for him. Galicia, where he has his family roots, and the Emporda, where he has lived his best years as a sommelier in El Bulli.
Roca del Crit is a wine made with Grenache and Carignan. The Grenache comes from the Mas Mares area, it is 15 years old and is planted on granitic soils. The Carignan, on the other hand, comes from the area of Rabos, it is over 80 years old and is planted on shale soils.
After the harvest, the Grenache is vinified in stainless steel deposits.10% ferments with the stems and ages on its lees for 6 months. The Carignan also ferments in stainless steel and is aged for 12 months in used barrels of different sizes, from 500 to 700 litres.
