Doi Shuzo Kaiun Iwaizake Junmai Ginjo Sake - 300 ml

Founded in 1872 during the Meiji Restoration, Doi Shuzo was established by Yasuichi Doi, a former village leader who transitioned from being a landlord to a sake brewer. The brewery is renowned for its use of soft spring water from near the ruins of Takatenjin Castle, which contributes to a lively fermentation and a distinctively 'melting' quality in their sake.

Description

This 100% pure rice Ginjyoshu is clear and colourless, featuring a lively and layered sensory profile. The nose is fragrant and youthful, offering a complex bouquet of banana, watermelon, and pink grapefruit alongside floral notes of cherry blossom and rose petal. On the palate, it is full-bodied and smooth with a creamy texture, showcasing a delicate balance of sweetness and acidity with flavours of wild strawberry and yuzu zest. The experience concludes with a medium complexity and a slightly savoury, clean finish characterized by high astringency. ABV 16%.
