Kilchoman Single Cask Batch 15/768 is an exclusive single-barrel release distilled in 2015 from Cask #768 (specifically selected for Western Canadian retailers and the Canadian Prairies market). Matured in a single fresh American oak ex-bourbon barrel, this expression was bottled non-chill filtered and natural in color at a cask-strength punch of 117 proof (58.5% ABV). By focusing on a single, un-vatted bourbon cask, it delivers an unadulterated, high-proof look into Kilchoman's farm-distillery character without sherry or wine cask finishing.

Spirit Description

This single malt displays a pale straw to light golden amber hue in the glass. On the nose, it opens with vibrant, un-cut Islay peat smoke, bonfire ash, and medicinal reek, quickly balancing into sweet vanilla bean, lemon zest, green apple, and fresh malt. On the palate, the 58.5% ABV cask strength provides a thick, oily, and mouth-coating texture. Initial notes of sweet caramel, toasted coconut, and tropical fruit give way to an explosive mid-palate of earthy peat smoke, cracked black pepper, and salty maritime brine. The finish is exceptionally long, warm, and drying, leaving lingering impressions of charred oak, citrus peel, and persistent coastal peat smoke.

Accolades

Kilchoman single cask releases—particularly full-proof bourbon cask selections—hold a stellar reputation among Islay whisky enthusiasts and independent reviewers. Independent review outlets and platforms like Whiskybase routinely score Kilchoman single bourbon barrels in the 88–92 point range, praising their raw, ester-rich citrus brightness, clean peat smoke, and lack of chill filtration.
