“Time is at the heart of the Dom Perignon equation". It is thanks to Richard Geoffroy, the former Cellar Master of the House, an individual who truly embodied the heart and soul of Dom Perignon for 28 years, that the concept of "Plenitude" was born. The expression of a vintage is not fixed in time. Instead, it evolves in stages. The P2 or Second Plenitude offers a brand new expression of a single Vintage Champagne after more than 15 years in the making.

Warm, gourmand and exotic, this champagne charms the nose with its bright aromas. Touches of candied fruits, frangipane and sweet spices follow refined notes of saffron. Gradually, the aromatic bouquet becomes more mysterious, more restrained, evolving iodised and saline notes. It is, however, on the palate that Dom Perignon 2002 Vintage Plenitude 2 expresses itself to the fullest, revealing a remarkable opulence, as well as an airy grace reminiscent of the light movements of a ballerina. With great sensuality and depth, the palate offers bright fruit, further enhanced by an intense energy. On a long, lingering finish that seems infinite, the champagne expresses a refined character with slight saline notes and flavours of liquorice.

Here we have drive, vinosity and incredible length. The sweet and savoury balance indulges with a seductive embrace. Gustav Klimt in a glass maybe. Outstanding.

Intense, rich and dense P2 with butterscotch and toffee character, together with apricot compote, mango crumble and pie crust. This is at its height right now. Tremendous pleasure and generosity. In a beautiful place.
