Kamoshibito Kuheiji 'Human' Junmai Daiginjo Sake - 1.8 Litre

Kuheiji's 'Human' is all about umami and sweetness!  'Human' is part of this cult brewery's trio of specially crafted sakes called 'Collection', demonstrating 'the will to create'.  It's the richest of these three versions of sake worked from the angle of polishing. The emphasis is deliberately placed on the umami, which provides a complex structure for the sake, which also needs to be supported by beautiful sugars. These sakes require slow maturation in the bottle to reveal the complexity of tertiary aromas, which is the very essence of Kuheiji's desire to sublimate matter.  The notes of acacia and honey in this sake marry the dense and creamy mouth of candied wedge.  Although not central to the theme that animates this cuvée, the presence of a delicate acidity brings the necessary freshness on the finish.

Perfect with an old cheese, or a creamy sauce dish, 'Human' is a flattering cuvée that is accessible to all those who claim to be human!  Showing pear and grapefruit notes with nuances of anise, this sake is rich overall.  Balanced well by its bitterness and acidity, its aftertaste is fresh and light - a classic style of Kuheiji.
