Winemaker David Paterson has been transitioning his Rosé to a lighter hue of salmon-pink while keeping the juicy, savoury notes that make it so attractive. It’s a blend of 65 per cent Pinot Noir from younger vines and older-vine Pinot Meunier, a grape often used in sparkling wine. The Pinot Noir was harvested early to keep it fresh and lively. Then smaller amounts of both Pinots were fermented with wild yeast in neutral oak barrels. Finally, the juice was aged on its lees for a couple of months.

The process has created a bright and pretty wine, with rose petal, cherry and raspberry aromas and flavours of cherry, raspberry, spice, orange and light ginger. It is dry and finely balanced, with bright acid and a long, mouth-filling finish. Salmon, chicken tagine or bahn mi pork burgers should pair well.
