Maotai or Moutai is a style of baijiu, a distilled Chinese liquor (spirit), made in the town of Maotai in China's Guizhou province. The Maotai Town distillery region is located at the upper reaches of the Chishui River, where the water is the purest and there is a high concentration of micronutrients, which gives the liquor its unique, savoury taste reminiscent of soy sauce. Produced by the state-owned Kweichow Moutai Company, the beverage is distilled from fermented sorghum and has been drunk since the Qing dynasty. Maotai was declared China's 'national liquor' in 1951, two years after the founding of the People's Republic of China.
