Prospect Winery Cabernet Sauvignon-Merlot 'Stags & Bears'

"In a word? Wild. A lot has changed in the four generations my family has farmed the Okanagan, but it's still untamed. Don't let the well-manicured vineyards fool you. Step just beyond their borders, and you're in the realm of stags & bears. And being wild animals, sometimes they don't stay in the wild. The stags come out of the hills in spring and nibble fresh shoots from the vines. If we let them. A bar of soap is enough to put them off – a pioneer's trick. Bears? They love our Merlot, Cabernet Sauvignon, and Cabernet Franc at optimal ripeness with rich fruitiness and balanced acidity. From what I've seen, they have good palates. The nose is rich  with red berry, cocoa, tobacco, and cedar. A robust and rich palate reveals red berry and cassis, a hint of tobacco, and chocolate. Medium-bodied and smooth.

Pair it with roasted chicken, steaks, lamb, burgers, spicy Thai dishes, and hard-aged cheeses.
