The Thieves love a good Pinot Grigio, so they set out to craft a wine that would impress. The wine first undergoes 100% non-malolactic fermentation before being cold fermented at 50°F. These processes enhance and preserve the bright aromas, fresh fruit flavours and crisp, refreshing acidity that make Pinot Grigio so darned delicious.
