Distilling at Lindores Abbey began centuries ago, with the earliest written reference in Scotland to Scotch Whisky (or Aqua Vitae) appearing in the Exchequer Roll in 1494. It records a Brother John Cor, a Lindores monk, who was commissioned by King James IV to turn eight bolls of malt into Aqua Vitae. 8 Bolls of malt amounts to around 500 kg in modern terms and would have been enough to make about 400 bottles of today's whisky. In 2017, spirit started flowing again from copper stills at Lindores Abbey Distillery, and the first single malt whisky was released in 2021.
This limited edition release, launched as 'The Casks of Lindores' series, showcases the award-winning spirit of Lindores Abbey Distillery. This first release has matured in ex-bourbon casks at a higher strength than the core single malt release at the distillery.
Nose: Mellow, fruity, red apples and pears combined with sweet vanilla, butterscotch and custard with citrus touches.
Palate: Vanilla mixed with orchard fruits like green cooking apples. A hint of bitterness, along with oaky notes and spicy pepper, are on the back palate.
Finish: Mellow vanilla continues, with more sweet apple and pear, but that bittersweet woody spice lingers, backing up a peppery warmth.
