The Bollinger Vieilles Vignes Françaises is an extraordinarily rare and historic Champagne, produced from ungrafted Pinot Noir vines in the Grand Cru village of Aÿ. Champagne Bollinger, founded in 1829, has long been renowned for its rich and structured wines. This cuvée is crafted exclusively from two pre-phylloxera plots, Chaudes Terres and Clos St. Jacques, which are cultivated by hand using traditional methods.
Wine Description
Vieilles Vignes Françaises presents a deep golden hue, exuding richness and depth. The nose is highly expressive, with aromas of quince jelly, mirabelle plum, and dried fruits, accented by notes of mocha and toasted brioche. The palate is opulent yet precise, delivering layers of ripe orchard fruit, spice, and mineral-driven complexity. The finish is exceptionally long, with a saline edge that enhances its elegance. Made exclusively from Pinot Noir, this Blanc de Noirs Champagne has a dosage of 4 grams per liter and was cellar-aged for more than twice the time required by appellation standards, resulting in a wine of remarkable depth and refinement.
