Nose Aromatic with a mountain of sweet-dried raisins, toffee, maple syrup, and dried dark fruits. Dark honeycomb with an almost ‘apple-pie filling’ and slight old & wet sweet note that bounces around the tip of your nose. Little to no burn, and with longer and deeper breaths taken, you get more and more of that Oloroso sherry note that makes a Kavalan Sherry, a Kavalan Sherry.
Palate An explosion of sweetness as the first sip enters your mouth, with rich cocoa and more dark fruits – and then a slight peppery taste pops up. More sweet sherry, cinnamon, burnt caramel with a dry cake crust that I rarely find in other Kavalan Sherry casks. Then this faint dryness-taste that strikingly creates ‘taste’ images of Kavalan’s cask warehouses, with a damp sweet taste that lingers for a long time. Rounded out by more soft spices smothered in sweet honey & sherry.
Finish A distinguished balance of length and sweetness with hints of spice that coats your mouth and then after some time, sherry dryness is left on the sides with your roof engulfed in sweetness. There are fruit notes I picked up on this finish that weren’t present on the palate – like dry guava and plum – engaging me to enjoy another sip.
