Traditionally, a Postmark is stamped on mail to indicate a significant place and date. A bottle of wine can create a similar experience in that it brings you back to a unique site and vintage. This particular Postmark is a snapshot of Paso Robles in a particular vintage.
These Cabernet Sauvignon grapes were sourced from the Adelaida, Estrella and El Pomar sub-appellations, aged 12 months in French oak (40% new oak). Ideal mild weather throughout harvest allowed each block to be picked at exactly the right time, ensuring optimal ripeness and flavour development.
This luxurious Cabernet Sauvignon offers aromas of blackberry, raspberry compote, plum and warm winter spices, as well as hints of lavender. The dark fruit layers are echoed on the palate, where they mingle with notes of dark chocolate, coffee, and star anise, with plush, velvety tannins carrying the wine to a long, rich finish. Made with 100% Cabernet Sauvignon.
