Winemaker Katie Povah brings a deep understanding of the Paso Robles area, striving to express the luxurious power and complexity of its great Cabernet Sauvignon. The name Postmark reflects the idea that the wine is a snapshot of the special place and vintage from which it was crafted.
Wine Description
This Cabernet Sauvignon has a deep purple colour. The aroma profile is robust and vibrant, presenting notes of blackberry and raspberry compote. The palate echoes these fruit notes with layers of black currant, bittersweet chocolate, and sweet oak. Critics also note aromas and flavours of blackcurrants, cedar, licorice, spices, Damson plums, blackberries, tobacco leaves, and graphite. The wine is full-bodied, presenting a lively tension between bright acidity and firm tannins. This structure leads to a refined and elegant finish. The varietal composition is 88% Cabernet Sauvignon, 10% Petite Sirah, and 2% Merlot. The wine was aged for 16 months in 100% French oak, with 40% new and 60% neutral barrels. The alcohol by volume (ABV) is 14.5%. The optimal drinking window is now or for several years of future ageing.
