55% Grenache Noir, 25% Carignan, and 20% Syrah grown on schist hillsides. The Carignan is vinified using carbonic maceration and a two-week vatting phase. Grenache and Syrah in traditional fermentation with temperature control after destemming. The cap is regularly wetted with aeration of the fluids and a shedding is done at the onset of fermentation.
The hue of this organic wine is a rich blue-violet intensity. Red fruits and spices are clues in the scent. Fresh, full-bodied, and generous in flavour, with a lasting aftertaste. L'âme Buissonnière AOC Fitou, Cascastel is best served with meat dishes that are more robust and peppery.
