Fornace is Selvapiana’s Super Tuscan wine, based entirely on Bordeaux grape varieties - Cabernet Sauvignon, Merlot, and Cabernet Franc - grown on the estate. The grapes are grown on beds of dry, stony clay and limestone in Rufina's Fornace and Casanova vineyards. All-natural yeasts ferment the wines in stainless steel at 28°-30°C. It takes 25 days to ferment and macerate the wine. After the alcoholic fermentation, malolactic fermentation occurs. The wine is then matured for 29 months in French oak barriques.
There are hints of brambly currants and red berries, as well as baking spices and tobacco, in the aroma. The tannins are traditional chewy and dusty on the palate, with flavours of tart red cherries, smoky meats, and cedarwood.
