Toko Fukuro-Tsuri Junmai Daiginjo is the ultra-premium masterpiece of the Kojima Sohonten brewery in Yamagata Prefecture. Established in 1597, the brewery is one of Japan's most historic, and this specific bottling represents the absolute peak of their technical ability. The term "Fukuro-Tsuri" (meaning "bag hanging") refers to a rare and labor-intensive method of separating the sake from the rice solids without the use of a mechanical press.

Description

In the Fukuro-Tsuri process, the fermented mash is placed into cloth bags that are hung from the ceiling. The sake is allowed to drip out slowly, drop by drop, using only the force of gravity. This prevents the harsh tannins and bitterness associated with mechanical pressing from entering the liquid.

  • Aroma: An incredibly pure and intense nose featuring notes of premium melon, ripe pear, and delicate white blossoms.

  • Palate: On the tongue, it is remarkably silk-like and elegant. It offers a "limitless" purity with flavors of nectarine and sweet cream, finished with a subtle, shimmering minerality.

  • Technical Profile: Brewed with 100% Yamagata-grown Yamada Nishiki rice polished to 35%. It is typically bottled at 16% ABV and reflects the "drip" method’s signature clarity and refined sweetness.

Food Pairing

This is a "meditation sake" designed for special occasions. Its extraordinary delicacy requires pairings that do not mask its subtle nuances.

  • Luxury Sashimi: Pairs perfectly with the highest grade of fatty tuna (otoro), sea bream, or sweet raw prawns (ama-ebi).

  • Delicate Umami: Enhances the subtle sweetness of snow crab, steamed abalone, or chilled silken tofu with a drop of white soy sauce.

  • Refined Appetizers: Complements light, fruit-based starters like a white peach and burrata salad or a mild yuzu-scented scallop carpaccio.
