The weather is getting cooler and it's time for sipping Cognac by the fireplace, but what exactly is Cognac?

Basically, Cognac is a Brandy made from the white wine grapes grown in the Cognac region of France. 

Cognac is made by the long-established method of double distillation with ageing copper still. The distillation starts the 1st of November and is required to be completed before the 31st of March of the following year. The spirit that then emerges is referred to by the French as "eau de vie" or "water of life." At this stage, the Cognac is completely clear with very concentrated peach-like aromas. As the Cognac ages, the colour changes and rich aromas of caramel, coconut and spice are detected.

As far as types of Cognac, there are three:

VS - Very Special - a minimum of 2 years of cask aging

VSOP - Very Special Old Pale - a minimum of 4 years cask aging

XO - Extra Old - a minimum of 6 years cask aging

Cognac pairs well with chocolate and if you are thinking of pairing it with cheese, try Brie.
