Johannes Zillinger Revolution White Solera (NV)

Johannes Zillinger took over management of his family's 350-year-old Austrian winery in 2013. Already one of the first wineries in his region to convert to organic viticulture, Johannes converted the operation to full biodynamics. His wines are now certified organic and Demeter biodynamic. His commitment to a natural minimalist approach to all farming and winemaking has resulted in extraordinarily clean wines that are authentic expressions of the grapes they are made from.

Blend of Chardonnay, Scheurebe, and Riesling.

Apricot, Christmas spices, brioche, a bit of terra cotta. The Chardonnay provides fruit, weight, and texture. The Scheurebe is there for floral characteristics. The Riesling solera is the structural backbone of the wine. It is there for acidity and a rocky mouthfeel.
