Production Process
This whiskey is crafted using a combination of peated malt and the distillery's signature five-malt barley bill, which includes Washington Select Pale Malt, Munich Malt, Extra Special Malt, Pale Chocolate Malt, and Brown Malt. The peated malt is sourced from Scotland, imparting a smoky character, while the diverse malt bill adds depth and complexity. Fermentation is carried out with Belgian brewer's yeast, enhancing fruity and floral notes. The spirit is then aged for a minimum of 24 months in a combination of new American oak and first-fill ex-bourbon barrels, allowing the flavors to mature and integrate.
