The Hilltop Cabernet Sauvignon is crafted from meticulously selected vineyard blocks, showcasing the depth and complexity that Paso Robles is known for.
Wine Description
This Cabernet Sauvignon displays a deep red-purple hue, reflecting its rich concentration. Aromas of blackberry and blueberry dominate the nose, complemented by crushed violet, herbes de Provence, and spiced tea. On the palate, layers of black and red currants unfold, supported by finely textured tannins. Extended barrel aging imparts subtle pastry notes, while the wine finishes bright and enduring. The blend consists of 95% Cabernet Sauvignon, 3% Petit Verdot, 1% Malbec, and 1% Cabernet Franc, with an aging potential of 10 to 15 years.

Food Pairing
This wine pairs exceptionally well with rosemary-seasoned ribeye, garlic roasted potatoes, and root vegetables such as parsnips and fennel. These combinations elevate the wine’s depth and structure, enhancing its bold yet elegant character.
Vintage Quality
The 2021 vintage in Paso Robles was marked by a dry winter and spring, resulting in small but highly concentrated berries. The region’s mild daytime temperatures and cool nights allowed for optimal ripening, producing wines with remarkable structure and intensity. The extractable anthocyanin content reached an all-time high, surpassing even the standout vintages of 2007, 2013, and 2019.
For optimal enjoyment, decant before serving to allow the wine’s full complexity to emerge.
