Anejo

Tequila is one of the most popular liquors across the globe, but the spirit can still be quite confusing. Although it is widely known that tequila is made from 100% agave, some don’t realize that the spirit must be made in certain parts of Mexico, otherwise it’s not considered tequila. The Mexican law states that tequila can only be made in the state of Jalisco and a few small regions in other states such as Nayarit, Guanajuato and Tamaulipas. On top of that, the tequila spirits are also classified further depending on their aging process, Blanco,Reposado, Anejo andExtra Anejo. There is alsoMezcal, but it’s not considered “tequila,” which is made all over South America.

Anejo tequila is considered second top category, right after Extra Anejo. It’s been aged from one to three years in oak barrels and is considered “sipping tequila" because the flavour of the spirit after aging is a notch milder, with flavours of not only agave, but oak and vanilla as well. Add rich floral aromas and you have a fine Anejo tequila.

Anejo is often darker than reposado and is known for being much smoother. While Blanco is perfect for light cocktails like  a Margarita and Reposado is well-suited for heavier ones, Anejo is mostly “sipped straight”, much likecognac.
