There are around 1000 Tequilas to choose from these days, Blanco, Oro,Reposado,Anejo,Extra Anejo,Mezcal and that’s just Mexico. If you go further south, there are many other agave spirits such as Raicilla, Bacanora, Sotol, Pulque among others.
The history of Tequila dates all the way back to the Aztecs, who first made a drink from the fermented sap of the agave. Later, in the 1500s, the Spanish began to distill mezcal. Lastly, the tequila, as we know it, was born in the 1700s.
There are two main types of tequila. They are 100% Blue Agave and Tequila Mixto. While 100% Blue Agave tequila must be made in Mexico and labelled “Tequila 100% puro de agave”, Tequila Mixto can be bottled outside of the Tequila region, including other countries. The only requirement is that mixed tequila has to contain at least 51% Blue Agave. The rest of the spirit is usually cane sugars. Other products that are allowed into the liquor are sugar-based syrup, caramel color, glycerin and oak extract flavouring.
Blanco tequila is the purest form of it. Distilled fresh, it doesn’t undergo any aging process at all. As a result, Blanco tequilas show the true expertise of the distiller, because there is no aging or oak flavouring to hide behind, simply the flavour of agave.
