This 11 year old single cask, Islay single malt from Caol Ila was distilled in November 2010 and initially matured in refill hogsheads, before moving to a fresh sherry butt for 16 months.
The nose delivers smoked bacon, bursts of ripe cherries, dried vine fruits, and a hint of damp ashes. Oily, with drizzles of creamy caramel, raisin-studded fruit compote, cocoa nibs, and plenty of sherry character mingling with BBQ smoke on the palate.
Finally a sherry sweetness lingers alongside drying oak, and smouldering embers.
