The Cistercian Sisters of Monastero Suore Cistercensi reside and work in Vitorchiano, a little town about 90 minutes north of Rome in the Lazio province. Eighty women from this religious order work naturally in vineyards, orchards, and gardens at this tranquil monastic enclave. They make two wines under Bea's direction that are as honest, empathetic, and generous as they are.
The Coenobium is the basic wine of the Monastery. Its intrigue comes from the volcanic soils that underlay the vineyards and the longer than usual contact that the fermenting juice has with the skins … this being a vinification technique encouraged by Bea.
