'Dai Shichi Minowamon' is a junmai dai-ginjo made with the Kimoto method, using Yamada Nishiki sake rice polished with Dai Shichi's unique superflat rice polishing technique. This dream sake has a beautiful nose filled with Bosc pear, almond tofu, and tapioca. The clean mouthfeel of the first sip of makes you a believer, as the umami richness and naturally elegant notes shine through, with soft hints of vanilla, apricots, and rice pudding.
