A family-owned winery with traditions dating back to 1790, Parés Baltà owns five estates in the Penedès mountains. The variety of the soils and elevation create unique microclimates that give a special personality to their wines. Organic viticulture is at the heart of the operation. Today the estate’s management is led by brothers Joan and Josep Cusiné, and the winemaking is in the hands of their skilled oenologist wives, Elena Jimenez and Marta Casas. Parés Baltà’s wines and cavas express the essence of the Mediterranean ecosystem with elegance, concentration and balance.
The original variety, Xarel-lo, is joined in the Blanca Cusiné by two historic sparkling wine grape varieties, Chardonnay and Pinot Noir, which are grown under the influence of the Penedès high mountains' temperature and soil. To create a delicate and refined sparkling wine, the Pinot Noir was vinified as a Blanc de Noir. The wine's extensive aging has given it a golden yellow hue. It has a deep and subtle aroma with notes of almonds, hazelnuts, honey, and fresh prickly pear on the nose. It's round on the palate, with notes of preserved, ripe fruit that complement those found in the nose.
