Vieux Pontarlier 65° Les Fils de Emile Pernot Absinthe

Les fils d'Emile Pernot is a traditional French distillery founded in 1889 by Emile-Ferdinand Pernot in Pontarlier, Haut Doubs.  The Emile Pernot Distillery has created and distilled several absinthes that are considered among the best artisanal absinthes in the world. Emile Pernot "Vieux Pontarlier" Absinthe Francais Superieure is carefully crafted in small batches using alambic stills that were specifically designed to make absinthe.

The initial taste is intense, spicily piquant, with complex aromas - peppermint and grand wormwood are very present.  The flavours are round and herbal, cradling the wormwood and a long, refreshing, cooling finish of anise and fennel seed.  The haze is very marked and gives a milky absinthe with very elegant green reflections.
