Produced by Asahi Shuzo, the Dassai 39 (San-wari Kyu-bun) is often described as the "skillful balance" of the Dassai lineup. It sits precisely between the approachable Dassai 45 and the ultra-premium Dassai 23. The "39" indicates that the Yamada Nishiki rice—the "king of sake rice"—has been polished down to exactly 39% of its original size. This meticulous refinement removes outer proteins and fats to ensure a cleaner, more elegant flavor profile than standard sakes.
Description
This premium sake is clear and light-bodied with a soft, silky texture. The nose is delicate and refined, bursting with a "fruit basket" of aromas including ripe melon, pineapple, honeysuckle, and fresh pear. On the palate, it offers a harmonious balance of sweetness and acidity, with flavors of lychee, apple, and mango intertwining with subtle underlying notes of steamed rice and light umami. It finishes crisp and smooth, leaving behind a nuanced trace of minerality reminiscent of a clear mountain stream. ABV 15%–16%.

Dassai 39 is highly versatile and designed for "tasting," making it an ideal companion for clean, fresh flavors.
