A Rose of the southern Italian grape Aglianico from Irpinia, hand picked, de-stemmed and treated to a 12-hour maceration. The wine aged for four months in stainless steel prior to release. The result is a medium salmon colour with a peppery, flowery, saline aspect. The body has more tannic structure than expected, and overall the wine feels serious and quiet. Whereas much Rose is meant to partner with the fresh, raw, and youthful, this one works with savoury fare, especially aged and washed-rind cheeses, rare meat, dark poultry.
