Koch El Mezcal de Oaxaca Tobasiche

General Information
Tobaziche is one of the most easily identified subspecies of agave due to their unusual elongated piñas. They more closely resemble a palm tree than what is typically thought of when agave plants are discussed. Wild tobaziche agaves take roughly 12 years to mature and easily grow to over 8 feet. Master Mescalero Adrián Bautista produced this mezcal in Rio de Ejutla, Oaxaca using traditional methods.

Tasting Notes
Somehow both fresh and rustic, the nose is broad and herbaceous with ginkgo nuts, lettuce, grilled meat and charred rosemary. Dates and sweet grass also come to mind along with latex paint. The palate leaves a similar impression with but also has flavors of lime pith, papaya, and oregano. It drinks like a meal with its meaty and herbaceous profile with just enough fruit on the finish to keep it interesting.
