Introduction
The Yamamoto Pure Black Junmai Ginjo is from Japan, specifically the region of Akita. The Yamamoto Sake Brewery was founded in 1901. The current brewer, Tomofumi Yamamoto, is the fourth-generation owner and also serves as the Tōji (Master Brewer), a rare combination in Akita sake. In 2005, he launched the 'Pure Black' brand, which has since become the main brand and backbone of the brewery. The brewery uses natural soft water sourced from the Shirakami Mountains.
Description
This is a modern, fresh style of junmai ginjo. The sake has aromas of rockmelon, kiwi, pineapple, grapefruit, and natural wet stone. The palate is dominated by flavours of sherbet, citrus peel, honeydew, pink grapefruit, and minerals. It is bottled shortly after pressing, which leaves a slight spritz on the palate. The sake is characterized by a clean finish and food friendly acidity. The ABV is 15% or 16%.
Food Pairing
This junmai ginjo's light, fresh, and fruity profile makes it well-suited for a variety of dishes. It is an excellent pairing for sushi and sashimi. The style also complements salads, light vegetables, and tofu dishes. Given its acidity and light umami, it pairs well with the meatiness of grilled king oyster mushrooms in a tare sauce, or King Oyster Yakitori. Its light, fruity notes are ideal with delicate meats such as grilled chicken.
