Gin Description

The core of the collection is the Empress 1908 Indigo Gin, handcrafted in small batch copper-pot stills. The Indigo Gin's varietal composition includes eight signature botanicals, notably juniper, grapefruit peel, ginger root, rose petal, cinnamon bark, coriander seed, and a signature blend of black tea served at the Fairmont Empress Hotel. The most visually distinctive botanical is the butterfly pea blossom, which imparts a deep, vivid indigo colour.
