This rare single vineyard Fume Blanc boasts fragrant aromas of ripe stone fruit, fig, lemon zest and green tea. The wine is fine, almost delicate, and elegant with a flavourful palate of ripe white peach and kiwi fruit. The wine is balanced by a racy core of acidity adding notes of minerality and a crisp, clean finish. The majority of the wine (73%) was tank fermented to retain the fresh, forward fruit flavours that are indicative of this vineyard. The balance of the blend (27%) was barrel fermented in French oak. The barrel portion was aged sur lie for nine months to add texture and creaminess. A very small amount of Semillon (5%) from the Lyon Vineyard, fermented in stainless steel, completes the final blend.
