This wine originates from the Corbieres Boutenac region in Languedoc, France. The Bories family has owned and maintained the estate for 200 years, with current proprietor Pierre Bories revitalizing the property starting in the 1980s by focusing on preserving the vineyard's exceptionally old vines. The winery follows a philosophy of sustainable and organic viticulture, utilizing indigenous yeasts and minimal intervention to reflect the unique Mediterranean red sandstone and limestone terroir.
Wine Description
Deep ruby in colour, this red blend opens with an alluring bouquet of wild black raspberry, sun-dried cherry, and dark wild berries, complemented by savory notes of leather, tobacco, and Mediterranean garrigue. On the palate, the wine is medium to full bodied with a supple, silken texture and well-integrated tannins. Flavours of plum, liquorice, and baking spices lead into a long, layered finish that balances richness with a vertical, mineral freshness.
Food Pairing
This wine is an excellent companion to herb-crusted lamb, duck confit with cherry compote, or rosemary beef skewers. It also pairs beautifully with hearty stews, grilled eggplant with romesco sauce, or a charcuterie board featuring aged cheeses.
