Founded by the Cortés family (often referred to as mezcal royalty), El Jolgorio operates as a collective bringing together over 16 indigenous families across ten distinct micro-regions of Oaxaca.
Rather than blending agaves, El Jolgorio focuses on single-species expressions—predominantly wild and semi-wild agaves that take anywhere from 8 to 25+ years to reach maturity. Every hand-marked bottle acts as a transparent record of authenticity, explicitly details the agave species, village of production, harvest year, specificMaestro Mezcalero, and exact bottle count.

Earth Pit Roasting: Agave hearts (piñas) are slow-roasted for days in underground conical earthen pits lined with volcanic river rocks and fueled by local oak, imparting balanced wood-smoke nuances.

Traditional Milling: Roasted agaves are crushed using horse- or mule-drawn stonetahonas or hand-milled with wooden mallets.
