Garnier & Fils Collection
The Modern Vanguard of Pristine Chablis: Discover Organic High-Density Vineyards, Long Lees Aging, and Pure Kimmeridgian Salinity.
A Bold, Uncompromising Reimagining of Chablis Terroir Founded by brothers Xavier and Jérôme Garnier in the late 1990s, Maison Garnier & Fils represents one of the most exciting, quality-driven modern movements in the historic appellation of Chablis. Located in Ligny-le-Châtel—the northernmost boundary of the Chablis wine region—the Garnier brothers have eschewed commercial short-cuts in favor of organic viticulture, high-density vineyard planting, indigenous wild-yeast fermentations, and unusually extended aging on fine lees.
While traditional Chablis can sometimes tilt toward sterile, hyper-acidic, or overly oak-driven extremes, Garnier & Fils strikes a rare, highly coveted balance. By harvesting perfectly ripe Chardonnay fruit from ancient Kimmeridgian and Portlandian limestone-clay soils, utilizing larger oak foudres and neutral demi-muids, and bottling without fining or heavy filtration, Garnier & Fils crafts Chablis defined by broad mid-palate weight, vibrant orchard fruit, and electric, mouthwatering mineral salinity.
Craftsmanship & Uncompromising Cellar Philosophy
-
Kimmeridgian Limestone Terroir: Sourced from ancient seabed soils packed with fossilized marine shells (Exogyra virgula), imparting Chablis's signature oyster-shell minerality and flinty tension.
-
Low-Intervention Vinification: Natural fermentations using ambient wild yeasts, avoiding commercial enzymes or forced temperature shocks to allow each vineyard parcel to speak freely.
-
Extended Barrel & Lees Maturation: Aged on fine lees for 12 to 24 months in larger neutral oak casks (300L to 600L) rather than small new barriques. This process softens sharp malic edges and builds a velvety, textured mouthfeel without masking Chardonnay's natural fruit.
-
Minimal Sulfur & Unfiltered: Bottled with minimal added sulfites to maintain luminous clarity, aromatic purity, and vibrant energy.
Crown Jewels & Portfolio Highlights
-
Garnier & Fils Petit Chablis & Chablis AC: Exceptionally high-performing village and regional bottlings. Crisp, energetic, and lip-smacking—packed with lemon zest, green apple, white peach, and crushed chalk minerality.
-
Chablis Premier Cru Mont de Milieu: Sourced from one of the warmest, south-facing Premier Cru slopes on the Right Bank of the Serein River. Rich, solar, and generous, offering ripe stone fruit, citrus oils, and flinty smoke.
-
Chablis Premier Cru Fourchaume: Famous for its elegance and floral perfume. Displays acacia blossom, Meyer lemon, wet stone, and seamless textural balance.
-
Chablis Grand Cru Les Clos & Vaudésir: The peak of the estate's production. Sourced from legendary Grand Cru parcels, delivering monumental concentration, layered white truffle, toasted hazelnut, intense marine salinity, and 15+ years of aging power.
Epicurean Food Pairings & Service Protocol
-
Serving Ritual: Serve slightly cool at 50–54°F (10–12°C)—avoid over-chilling to allow subtle lees and stone-fruit aromatics to open. Premier and Grand Cru bottlings benefit from 30 minutes of aeration.
-
Gastronomic Companions: Fresh oysters on the half shell, seared sea scallops, lobster thermidor, roasted turbot with lemon-butter sauce, grilled prawns, goat cheese crostini, and roast chicken with wild herbs.
