For the Rose Fruit Defendu, the Cinsault grapes are de-stemmed and transferred to tanks for short soaking on the skins. They only use the free-run juices, no pressed juices, which are settled and fermented in stainless steel tanks. Temperature control is not too strict because an old varietal like this one would not appreciate high-tech winemaking! All the grapes are picked by hand. Shows equally well as an aperitif or with Mediterranean vegetables grilled over a wood fire. 100% Cinsault.
