Product description

Beringer Knights Valley Cabernet Sauvignon originates from California, within the Sonoma County region and the designated Knights Valley AVA. Recognized as one of California's most historic wine estates, Beringer Vineyards began farming in Knights Valley in the mid-1960s after recognizing the ideal volcanic, gravelly alluvial soils of the area. Beringer was instrumental in establishing Knights Valley as an official AVA in 1983. The estate's philosophy behind this bottling focuses on crafting an approachable, Bordeaux-style Cabernet blend that highlights the rugged, warm microclimate of northern Sonoma while maintaining balance, structure, and intense fruit concentration.

Wine Description

This red wine presents a deep garnet and inky dark purple hue in the glass. It exhibits a full-bodied, opulent, and supple structure supported by a smooth, velvety texture. The sensory profile is highly expressive and layered, opening with a bold bouquet of ripe boysenberry, black currant (cassis), and dark cherry, accented by nuanced aromas of wild sage, dried herbs, mocha, roasted coffee, and subtle baking spices. On the palate, it delivers rich flavors of dark stone fruit, plum, licorice, and dark chocolate, framed by plush, fine-grained tannins and a vibrant line of natural acidity. The finish is remarkably long, silky, and elegant, ending with lingering accents of cedar, spice, and dark berries.

  • Varietal Composition: Typically modeled as a classic Bordeaux blend dominated by Cabernet Sauvignon (around 85–90%), complemented by small percentages of Cabernet Franc, Merlot, Petit Verdot, and Malbec.

  • Stylistic Notes: The wine receives an extended maceration to extract deep color and polish tannic structure. It ages for approximately 14 to 15 months in French oak barrels (around 20% to 25% new) to integrate savory spice notes while preserving primary fruit purity.

  • ABV: Typically ranges between 14.1% and 14.8% depending on the vintage.

  • Organic Status: While Beringer employs sustainable vineyard practices, canopy management, and water conservation throughout its Knights Valley holdings, this bottling is not certified organic.

Food Pairing

The plush tannins, rich blue and black fruit core, and savory herbal undertones of this Sonoma Cabernet make it an ideal partner for robust, hearty dishes.

  • Red Meats: Pairs exceptionally well with grilled ribeye steak, prime roast beef, braised short ribs, or rack of lamb infused with rosemary and garlic.

  • Poultry & Game: Suggested pairings include roasted quail, duck breast with dark berry reduction, or pan-seared venison.

  • Savory Entrees: Complements wild mushroom risottos, truffle-infused pastas, and rich beef stews.

  • Cheese: Matches gracefully with sharp, aged cheeses such as aged Gouda, Beemster, or mature cheddar.
