This Cabernet Sauvignon originates from the United States, specifically the Paso Robles region of California. DAOU Vineyards was founded by brothers Georges and Daniel Daou, who sought an unrivaled terroir to produce Cabernet Sauvignon, a quest that led them to DAOU Mountain in the Adelaida District of Paso Robles. Their vision is to create California 'first growth' wine, fulfilling the district's destiny as a world benchmark for Bordeaux varieties. The winery is also a founding member of the Paso Robles CAB Collective, championing the region's potential for ultra-premium Cabernet Sauvignon.
Wine Description
The 2023 DAOU Cabernet Sauvignon presents a deep ruby-purple color. It is a powerful, complex, and layered wine that exemplifies Paso Robles. The nose is highly perfumed, with intense aromas of black cherry, cassis, plum, currant, black cherry jam, and blackberry jam, complemented by dark chocolate, tobacco leaf, cedar, and eucalyptus. Secondary nuances include desert sage, sandalwood, dusty minerality, cigar box, leather, and black olive. On the palate, it is rich and weighty, full-bodied, and structured firmly around a solid core of boysenberry and cherry fruit. Flavours of black raspberry, spicy currant, blueberry compote, cherry preserve, and fig meld seamlessly with crushed herbs and cranberry. It features excellent structure and harmony between the pure fruit core and a firm, supple backbone of ripe, fine-grained tannins. The finish is impeccably balanced, flowing effortlessly and leaving lingering notes of boysenberry, rhubarb, graphite, and dried thyme. The wine is primarily Cabernet Sauvignon (plus Petit Verdot, Merlot, and Cabernet Franc) and is fermented with proprietary native yeast, made from 100% free-run juice.
