This exemplary white wine originates from France, specifically the Chablis region of Burgundy. The Servin family has a storied history in the area, with roots in winemaking dating back to 1654. Today, the estate is directed by François Servin and Mark Cameron, who manage 37 hectares of some of the most famous slopes in Chablis. The winery's philosophy emphasizes a respect for tradition, such as the use of 'Sélection Massale' (uncloned Chardonnay) and hand-harvesting for top cuvées, while utilizing stainless steel to preserve the hallmark finesse and freshness of the Chardonnay grape.
Wine Description
The Chablis Vieilles Vignes displays a brilliant pale straw colour. The nose is airy and cool, offering pretty aromas of white orchard fruit, lemon-lime, and a distinct 'sea breeze' character, with a discreet application of wood that adds complexity without being toasty. On the palate, the wine is intense and medium-bodied with excellent volume. It delivers a 'fruit salad' of flavours including green apple, citrus zest, and peach, underpinned by a saline, mineral backbone and a touch of spice.
Produced from vines over 40 years old, this 100% Chardonnay is richly textured and generous. It is well-balanced, featuring a fine spine of acidity that leads to a clean, long, and youthfully austere finish.
