The 'Bon Sauvage' is a premium Pinot Noir from the United States, specifically the Willamette Valley in Oregon. Illahe Vineyards, whose name is a Chinook Jargon word meaning ‘earth’ or ‘land,’ was established in 2000 by Lowell Ford, who has been growing Oregon grapes since 1983. The winery’s philosophy is to make wine as naturally as possible, working by hand on small plots and avoiding the use of enzymes or additives.

Wine Description

This 100% estate grown Pinot Noir is a barrel selection of the winemakers’ favourite barrels. The wine offers a nose with notes of bright red cherry, cola, orange peel, and graham cracker crust, alongside coastal cabin aromas of salt and rock. On the palate, the wine is light yet intense, with flavours of cranberry, orange zest, and subtle baking spice that glide across silky tannins. Characteristically, the 'Bon Sauvage' is more earth and spice driven. This wine is made with 100% native yeast fermentation and ages for sixteen months in French oak, with 25% of the barrels being new. It is a complex, structured wine with gripping acidity, fine tannins, and a velvety finish that makes it suitable for enjoying now or for cellaring four to eight years. Illahe Vineyards is LIVE certified and Salmon Safe, indicating a commitment to sustainable farming practices.
