Fresh lime zest and green pepper aromas on the nose are carried through to the mineral palate which is alive with crunchy fruit, zest and a long, long zippy finish and make this Adobe Organic Reserve Sauvignon Blanc a great example of modern Chilean white wine making. The citrus flavours of this Sauvignon Blanc work well with all types of sushi and Mediterranean flavours such as goats cheese salad or smoked ham. Casablanca Valley is hugely influenced by its proximity to the cool breezes which blow in of the chilly Pacific Ocean. The vineyard soils are alluvial in origin, with sandy textures, high permeability, whose shallow depth restricts yield. These cooler temperatures and poor soils, in consequence, give great character in both flavour and aroma, especially for aromatic white varieties like Sauvignon Blanc. The 2016 harvest was hand-picked at dawn in the first week of March and vinification took place in temperature-controlled stainless steel tanks without any oak influence.
