At Diony Distillery, they believe in the power of focus and specialise in a limited range of products to master the craft of creating the finest spirits. Their goal is to perfect their process in crafting the best possible whisky for enthusiasts and connoisseurs alike.

Using 100% Canadian grains, they distil their spirits from scratch without any artificial colouring or additives. By fermenting at lower temperatures, they preserve the natural aroma of the grains. This slower fermentation process takes between 10 to 14 days, which in the industry, is considered to be a method of producing high-quality spirits.

Sugar cane, creme brule and a trace of sweet vanilla. Near the end of the nose, candied orange peel offers a citrusy element. The whisky is faintly sweet, spicy but smooth. A silky but weighty palate of raisin bread accompanied by roasted hazelnuts. The finish has a dry red wine essence with a subtle presence of lingering ground pink peppercorns.

Pair with dark chocolate, cheese, red meats, berries, and nuts.
