The current NV Cremant du Jura Blanc Brut is fermented in stainless with no MLF, and spends at least 2 years sur lattes before disgorged (date noted on the case) with 4 g/L. Based on chardonnay (50%), with savagnin, trousseau, poulsard, and pinot noir filling out the rest. This comes off estate vineyards in Arbois, Passenas, and Le Vernnois.
Crisp green apple, bright lemon, fresh almond is kissed with meringue on the brisk, shining palate finishing with a slick of salinity. Quite lively at present, and a lovely evolution of style for the house.
