El Jolgorio Madrecuishe Mezcal is the rarest and most exquisite mezcal in the world. It is made from the wild agave Madrecuishe, which takes 30 years to mature. The agave is then slow-roasted in an underground oven, crushed by a mule-drawn tahona, and fermented with natural yeasts. The fermented mash is then distilled twice in copper pot stills.
