Introduction
François Mikulski Monthélie Les Toisières 2023 is a red wine from France, produced in the Burgundy region and the Monthélie appellation within the Côte de Beaune subregion. The estate, run by François and Thomas Mikulski, is highly regarded for its precise, minimal-intervention approach to winemaking. The winery's philosophy centres on producing refined wines that express the elegance of Pinot Noir on confidential terroirs, such as the 'Les Toisières' lieu-dit.
Wine Description
The wine is 100% Pinot Noir. It has a light robe or a deep ruby red colour with vibrant hues. The aromatic profile is elegant and vertical, strongly marked by a fine minerality, with aromas of fresh red fruits, cherry, raspberry, plum, and a wide array of sweet and fine spices, including pink, Sichuan, and Espelette pepper. Notes of aquatic flowers, leather, and candied red fruits also emerge. It is a light to medium-bodied wine. The palate is fresh and very balanced, with dynamic fruit excited by an expressive acidity. It is juicy, showing delicate flavours of candied cherry, redcurrant, and a touch of quince, supported by fine, well-matured tannins. Stylistically, it is a refined, elegant, and harmonious wine, possessing a loquacious persistence where soil and spices intermingle. The wine is made from 45+ year old vines, with gentle extraction to preserve delicacy, and is aged in barrel with 20% new oak. The finish is very focused, marked by a saline and mineral aspect, with substantial length. The ABV is 12.5% or 13.5%. The optimal drinking window is 5 to 8 years, or 3 to 7 years. The vineyards are farmed using practising organic methods.
Food Pairing
This refined red Burgundy pairs wonderfully with roast poultry, especially fried roast chicken and peas. Suggested pairings also include pork filet mignon with mushrooms, guinea fowl in grapes, rabbit with mushrooms and lardons, and mature Comté cheese.
