The "Impossible" Sake from Japan’s Most Innovative Brewer. This bottle represents one of the most exciting projects in the modern sake world. Brewed by Miho Imada—one of the few female Toji (Master Brewers) in Japan—this sake features the Hattanso rice grain, a variety that had gone extinct for a century. Imada-san spent years reviving this heirloom rice from just a handful of seeds, and she remains the only brewer in the world to use it.
The "Hybrid Kimoto" method combines the ancient pole-ramming fermentation technique with modern Ginjo yeast. The result is a sake that bridges the gap between history and innovation: vibrant, texturally complex, and bursting with energy.
Tasting Notes: Expect a lively, slight natural fizz (petillance) on the tongue. The palate is driven by bright citrus (lemon zest, grapefruit), wild herbs, and a savory, mineral finish.
