Product description
Produced by Fukumitsuya Sake Brewery, the oldest brewery in Kanazawa founded in 1625, this sake is often labeled under the Fukumasamune brand name. Fukumitsuya is a dedicated junmai-only brewery that transitioned away from adding distilled alcohol in 2001 to focus on the purity of rice and water. The brewery uses Hyakunensui (100-Year Water), which is mineral-rich spring water that takes a century to filter from Mt. Hakusan down to the brewery's wells.
Description
This sake is well-structured and highly fragrant, designed to be an approachable and easy-drinking expression of the brewery's heritage. On the nose, it offers a pleasant aroma that precedes a palate balancing elegant sweetness with a bright acidity. It is characterized by its clean finish, which leaves subtle nutty notes and a refined aftertaste. Because it is a junmai, it is crafted using only rice, water, and koji, highlighting the natural umami of the grain. ABV 13%–13.7%.
