Produced by Take no Tsuyu Brewery in Yamagata Prefecture, this sake showcases the region’s dedication to ultra-premium craftsmanship. The brewery has a long tradition of blending modern brewing techniques with the natural advantages of local rice and pure mountain water. The ‘Yukimegami’ rice used here was specifically developed in Yamagata to rival Japan’s most prestigious sake rice varieties, ensuring a refined and distinctive expression.

Description

This daiginjo displays a pale, crystal-clear appearance with elegant aromatic lift. The nose carries fresh apple, delicate florals, and a hint of pear. On the palate, it is smooth and silky, with fine sweetness balanced by refreshing clarity. The texture is light yet concentrated, leading to a clean and lingering finish. At 17–18% alcohol, it delivers both finesse and presence. With a rice polishing ratio of 33%, only one-third of each grain remains, producing remarkable purity and refinement. The sake meter value of +2 indicates a slightly dry style, with balanced acidity and very low amino acid content contributing to its elegance.
